French Honey Almond Brittle
by Arnaud Soubeyran, France In France, nut brittles are called nougat. Makes sense since the ingredients are largely the same: nuts, sugar and honey. Soft nougat also contains egg whites, making it lighter and softer, while hard brittles are cooked longer to reach caramelization. The addition of honey differentiates European from American style brittles. You can't miss the delicious flavor of lavender honey in this regional specialty from Provence ~ it will linger in your mouth for some time.
Other names for this sweet: Nougat Noir de Provence Ingredients: Almonds 44%, Sugar, glucose syrup, honey 11%, edible wafer paper, vanilla natural aroma.
