Greek Wild Thyme Honey
by ApiPharm, Greece As seen in Saveur and Domino Greeks love this honey because of its pungent aroma, bright amber color, and lasting floral flavor. It is produced in a limited quantity by a beekeeper that sets his hives in the steep, arid White Mountains of Western Crete. Harvested in June and July, pure wild thyme honey is rare even in Greece, because it is the easiest honey to blend. This is a versatile honey. Pour it over cheeses, yogurt, and toast and enjoy its aroma. It can also be used to sweeten and flavor sauces and marinades. Naturally soothes coughs and has anti-inflammatory and disinfectant qualities.
